
Chicken Satay
1/3 cup peanut butter (chunky or creamy)
1/2 cup chicken stock
4 Tb soy sauce
2 Tb honey or brown sugar
2 cloves garlic, minced
1 inch piece fresh ginger, peeled and grated
1 Tb lime or lemon juice
4 skinless, boneless chicken breasts OR 8 skinless, boneless chicken thighs
1/4 vegetable oil
1/2 tp ground turmeric
1 tp ground cumin
1 tp coriander powder
salt and pepper
1. Simmer first 7 ingredients over low heat for 15 minutes.
2. Coat chicken with oil, turmeric, cumin, coriander, salt and pepper.
3. Grill or broil chicken.
4. Serve with Indian naan, peanut sauce, and our Asian Cucumbers (recipe here).
