We love this recipe - Chilled Asian Cucumbers. It's easy and tangy, the perfect side dish to an Indian feast. From our kitchen to yours!
Chilled Asian Cucumbers
2 cloves garlic, minced
3 Tb white wine vinegar
1 Tb water
2 Tb soy white sugar
2 tp soy sauce
Pinch of red pepper flakes
1. Peel the cucumbers and cut them in half length-wise. Scrape the seeds out of the middle with a spoon. Cut the cucumber into half-moon shapes or cubes.
2. Heat vinegar and sugar in microwave or on stove top for 30 seconds (until boiling). Stir to make sure sugar is completely dissolved.
3. Mix all ingredients in a bowl, and refrigerate for 30 minutes before serving.
4. If you want a little more zing, add some more vinegar and sugar.
