Cabbage salad
Here's another fabulous recipe. We know how to whip up some vegetables. We all need a few more veggies in our life, right? I'm craving this already....

Chinese Cabbage Salad

1 head cabbage, (finely chopped – two if small)

5 green onions, including tops, diced 

2 pkgs. Top Ramen noodle soup (break up noodles, discard flavor packet)

1/2 cup sesame seeds

1/2 cup butter

1 sm. pkg. sliced or slivered almonds

1/3 cup golden raisins

1 apple or Asian pear, diced

1 carrot, shredded

 

Dressing:

1/2 cup salad oil

2 tsp. soy sauce

1 cup sugar

1/2 cup apple cider vinegar

 

1. Chop onions and cabbage and mix together in a large bowl. Chill for two hours.

2. Brown noodles, sesame seeds and almonds in butter until a nice tan color. Drain on paper towel. Keep at room temperature.

3. Mix dressing ingredients until sugar is dissolved and oil blends in.

4. Twenty minutes before serving, mix salad and dressing all together. Makes plenty!
